Gelatinization is a form of heating at high temperature under pressure for a few seconds. This process involves soaking the roots in hot water until softened and then extruding the roots under pressure at a high heat for a few seconds. Gelatinization is unfortunate name for the process because it makes people think that the Maca powder contains gelatin. There are no animal products in Royal Maca; it is a vegan product.
